Grandmas Vegetable Beef Soup

This Soup is savory, hearty, and a family favorite! This is a recipe that was my grandmas that came from her mother as well. It's absolutely delicious and I hope you enjoy! This is easy to throw together, but takes hours to cook.


Ingredients & Directions

In a large pot, combine, cover, and simmer for 2 hours
  • 1-2 lbs Beef or Stew meat

  • 1/3 C Chopped Onion

  • 1 can Tomato Juice

  • 2tsp Worcestershire sauce

  • 3tsp. salt

  • 1/4 tsp. chili powder

  • 2 Bay Leaves

  • 6C H2O

Then add:
  • 1 can crushed tomatoes

  • 1C chopped celery

  • 1C diced potatoes

  • 1 bag of organic frozen veggies (this is the simple option)

If you are using fresh veggies in place of frozen :

  • 1C corn (or 1 can)

  • 1C carrots

  • 1C (any other veggies of choice)


Let simmer for another few hours until the broth thickens a little. The longer this cooks the better it is and the more tender the beef.

Tip: I top my bowl with a bit of Tabasco for a spicy twist.
